Believe it or not, I don’t always reach for a beer when making pancakes. I’d rather just drink the beer anyway. Since starting Henry, I’ve been experimenting with using the discard for different things, and the pancakes have been turning out pretty good.
The recipe I use now also uses yogurt instead of buttermilk. I’ve been experimenting with this substitution after a huge success with fried chicken (post coming soon), and it works really well in this sourdough pancake recipe.
90 g flour
1/2 t kosher salt
1/2 t baking soda
1/2 t baking powder
2 T sugar
125 g Henry (sourdough starter) discard
1/2 C yogurt
1 egg
Mix the dry (first 5 ingredients) and the wet (last 3 ingredients) then add the dry to the wet. Mix for less than 10 seconds…it will be lumpy, but that is totally fine! Use a 1/4 cup scoop onto the griddle (this gets me 4 pancakes on my griddle pan) set to whatever heat gets you the best pancakes (I’m never really sure what that is). This probably will get you 10 of the 1/4 cup pancakes (I made 8, then just dumped out the rest to make a giant pancake).
